Making Cake


The Mister went off crabbing with his brother at 5 am yesterday and I had planned on spending the day on the couch getting some knitting done but then I looked at some blog posts and Kathy B had posted about apples and I had an awful apple and an even worse pear in the fridge so I turned them into cake instead of knitting. 

Without a kitchen sink or any counter space it was not an easy task but that's how bad I wanted some cake.
I use the bucket method of clean up. One for washing. One for the first rinse and then another to catch the clean water I pour over them. It's tedious but it beats leaning over a bathtub. 

I toss it all in a towel lined roasting pan until I get around to drying it. 

I have had to make one big concession. I had to get a new coffee maker and switch to tea bags. Coffee grounds and loose tea are no fun to clean up so the tea strainer, the percolator and the French press are getting packed away for the duration.

Clean up is still the easy part though. Trying to find everything you need to make cake in this mess is the hard part. I've got bags and boxes everywhere and every time we make another change I get more. 

Cake! I've been wanting some cake since forever and this turned out to be a good one. It's Mom's Apple Cake and I found the recipe here. I did have to make some substitutions. Since I didn't have much fruit I quartered the recipe and used half white sugar and half brown. Instead of the orange juice I didn't have, I used cinnamon flavored applesauce. I also added some raisins and I could have eaten the whole thing in one sitting. But I didn't. But I could have.

  2. Bravo to you for making a cake with the current state of your kitchen! The cake looks delicious. I was just asking Fletch what kind of cake he would like for his birthday...of course...chocolate with chocolate frosting. It's what he ALWAYS wants!

  4. Oh you're making me want to bake! This house came with appliances (which was great, because we didn't have our own) but the oven is TINY! Dave keeps calling it an easy bake oven - it's not that small but it JUST fits my cookie tray. I haven't done any baking in it yet... but I really should give it a whirl.
