|Brown lentils, celery, garlic, carrots, Swiss chard, collard greens
The garden is still full of beautiful greens so this Sunday the soup pot was full of young collards and chard. The bugs have not discovered them yet so at the moment they are much easier to prepare than when I have to be extremely vigilant while looking for unwanted little visitors.
They were delicious in my favorite lentil soup recipe. I only wish I had added some kale. I have tons of kale.
