Better Late Than Never
Today's my 71st birthday but I have absolutely no interest in posting about that. I'd rather talk about fruitcake. I usually make mine the weekend after Thanksgiving but things got away from me so I made mine yesterday.
One thing that always gets in the way is that I can't find this stuff anywhere anymore so I have to order it. Yes, I know it's awful and full of terrible chemicals and artificial colors but fruitcake isn't fruitcake without it and believe me, I've tried to do without. This year I paid a fortune for it and had it mailed here. Life is just too short for healthy fruitcake.
I make a big production out of it. I soak my dried fruit in brandy over night.
The only time I use the mixer is at Christmas so it gets a good cleaning before I put it to work on the batter.
Ta da.....three itty bitty fruitcakes waiting to get glazed with the leftover soaking brandy. My little oven is not very good with cake so they cracked but that lets the brandy soak in better so it's not really a problem. Now I'll wrap them up and put them away until Christmas while giving them another soaking every few days. They'll be plenty boozy by then. All the leftover fruit won't go to waste. Next weekend I'll use it for some mincemeat and steam a plum pudding. Since my inner Scrooge usually starts to kick in right about now, eating my way through it always seems like the plan.
The happiest of birthdays to you my dear friend. I enjoyed reading about your fruitcake. My Mom used to make it and I miss it. Her recipe went with her when she died years ago. And I thought I had plenty of time to get her to write things down for us. After all, she was only 67 when she died and I was 30. So sad that so much was lost. Especially her laugh.
ReplyDeleteYour fruitcake looks great though. Our DIL "T" always brings us fresh mincemeat pies with icing from the UK when they come at Thanksgiving. Mandy and I especially look forward to them. She forgot this year! She was so upset that she forgot. I "guess" we'll have to forgive her though, but only if she promises to bring twice as many next year! lol
Have a wonderful Birthday Debbie.
Blessings and love,
Betsy
*happy birthday*
ReplyDeleteYou are only maybe the third person I've ever come across that likes fruitcake. You're a small but devoted bunch.
My mom always made Christmas fruitcakes, and after I (and my siblings) moved away, she'd send us each one, no matter where we were in the country (Canada) or how much it cost to mail. And those things were heavy!
ReplyDeleteI'm not even sure I really like fruitcake, but it was never Christmas without afternoon tea and a piece of Mom's fruitcake. She passed away in 2020, and I wish I had saved some of 2019's fruitcake, because even though she was not well, she still made them that year. Each year I tell myself I'll make one, but I haven't yet. Maybe this year.
I admit - I do not have that ambition. I get my fruitcake at the store! Always a favourite treat this time of year
ReplyDeleteHAPPY BIRTHDAY!!!!!
ReplyDeleteHappy happy happy! I do like those fruits that go in there--the whole shebang not so much.
ReplyDeleteLooks like a good thing you've gotten it made in time for Christmas eating!
ReplyDeleteThose fruitcakes look delicious and bring back good memories of making fruitcake with my Grandmother. It seemed like magical stuff to me as a child, loaded with fancy fruit and nuts, and it was magical in its own way. Enjoy (and Happy Birthday)!
ReplyDeleteHappy Birthday:) The fruitcakes turned out lovely.
