Eggsactly

I did the dumbest thing last week. I put a grocery order in for Wednesday thinking that I had put it in for Thursday so when I went all the way across town to pick it up, it wasn't there. They had canceled it and refunded my money the night before. I was mortified thinking of the poor guy who had to put all my things back. It was a BIG order. I'm too embarrassed to re-order right now so The Mister and I have been living out of the pantry this week. I've been sitting here staring at my last two eggs for days trying to figure out a way to honor them as it looks like they will be my last for awhile. You can't even get them here.

I transported them oh-so-carefully to a pan and gave them a very gentle boil then turned them into egg salad. I had some marble rye bread in the freezer, some lettuce, a handful of celery and a few pickles so that's what we had for dinner last night. I think my bad juju at the grocery store might be wearing off so I might think of putting in another order for next Wednesday. I should mention that if The Mister had looked at his text messages last Wednesday we wouldn't be in this pickle. The store texted him TWICE that morning to remind him of the pick up.

  1. Well that sucks! I don't do the pick up thing (I'd rather pick out my own stuff). When we shopped on Tuesday, there was no shortage of eggs.

  2. So it's really The Mister's fault! There are many days when my husband doesn't even turn his cell phone on. It's frustrating to say the least, but people have learned to call me instead. I don't really want to be his secretary! Best of luck with groceries and eggs this week.

  3. The egg salad on rye sounds great! Sorry about the mix-up.

  4. Wow, no eggs? I live in a pretty heavy dairy area and there's a few local farms that sell eggs if things go south.

  5. That's too bad about the grocery order. I make a list and Dennis goes and does the shopping for us as I detest grocery shopping. It just seems like wasted money to me. I'd rather buy yarn! :-)
Last time he bought eggs it was $11.28 for 18 eggs.
For our Valentine's cake decorating party tonight I made 5 cake mixes with each recipe using 3 eggs. That made a BIG dent in our eggs so I hope we can get more on Monday.
Your sandwiches sound great. I love egg salad.
    Blessings,
    Betsy

  6. Sorry about your order confusion.
Where do you get marble rye? I love it but not able to buy it here (Austin TX area). Jason's Deli makes sandwiches with it but sadly they don't sell it and often if I have a sandwich the bread is dry. Maybe I should buy a new breadmaker (mine died) and try to make it? Any suggestions welcome.

    1. The Mister has been picking up Pepperage Farm marble rye from our little mom and pop grocer. When I get an order from our big chain grocer I always try to get the Capitol Baking Company's rye as it is the best but it is always sold out. I need to find out when their delivery day is and meet the truck at the door....lol.

  7. The mister sounds like my Dad... NEVER looks at his phone. I stopped texting him directly. I call the landline (they still have one) or text Mom if I need something from him.

I feel for you guys in the egg department. Eggs got quite dear here at the start of COVID, but not as bad as they are for you now. It's wild!
